Since no one is responding to your post, I'll chime in.
The only audio out from a V16 is the headset drive on pins 1&2. This drives both headsets.
Assuming you have dual plug comms, you could make an 'intercept cable' with a male-female 1/4" jack pair and tap off to a suitable connector for your recording equipment (sometimes 1/8" jack). EDIT: ...although mobile phones almost never have an analogue audio input connector.
With this, you would record everything you hear in comms. The signal level is somewhere around line level (very roughly 0.5VRMS) so would be suitable for a line level input to a recorder - NOT microphone level.
