Why does my Blaze AHARS not have a vertical card selection?

I am assuming you are referring to heading information ?
For that you need to connect an SP6 compass so you can have heading.
The AHRS itself does not know which direction you are going unless you give it that information.
If you are looking for a gyro compass that is not available here - you can't yet do that with solid state gyros unless you are very rich and can afford a three axis ring laser gyroscope. It will happen one day there are several interesting developments even at the quantum level but nothing yet that is usable in the sense you can actually pay for it.

Hi Reiner I have the SP6 which is and working fine I am referring to the display of the compass, page six of the manual show a selection of setup of a Vertical Card compass display. Mine does not have that option

You'll have to upgrade the AHRS-4 firmware.
