If you disable the VSI in the menu will you get an airspeed ribbon in it's place?

The VSI bar will just disappear. A good suggestion though to replace it with the airspeed ribbon.

Can you say more about the change to the firmware? I noticed in the manual that the airspeed setup section prompts for a number of V-speeds. How are these V-speeds used? Is there a color associated with the speeds (e.g. corresponding to the green arc, white arc, redline, etc.? If I understand the firmware change, if the vertical speed is disabled, a colored airspeed tape will take its place?

Yes, a colored airspeed tape can be displayed with different colors for the Vne, Vno etc.
