AOA calibration in flight

Hi there.
There are 3 AOA "levels" to calibrate in the air, Cruise, yellow and red. When I calibrate the yellow, as an example, do I start and stop the calibration at the same airspeed, or can I start the calibration when I start to slow down, and stop the calibration at the airspeed just above stall?
And another thing, is it possible to edit the values from the calibration in the Efis later?
