Re CANbus wiring- best practice is screened twisted pair.
That will make a very robust and interference resistant network.
You can often get by with less than that, but at a minimum go twisted pair.

They normally don't leak, but best to use silicon rubber tube (the stuff model aircraft guys use as fuel tube) with a small cable tie sealing it off behind the barb on the nipple.
The seal can be easily broken if you use stiffer tube with any bending force on the nipple.

If the senders are resistive type you will need the pull-ups on. If voltage type, pull-ups off. The NIEU07D is what I use on 914s. The differential pressure (fuel to airbox) is typically around 3.5psi, so I suspect your sensor is doing exactly what it should. I would first check the RDAC channel is working. Disconnect the sensor and switch the pull-up resistor for that channel ON. Re OIL.P- the RDAC needs the 100ohm resistor input to ground to convert the current output from the sensor to a voltage for the RDAC to read.
